Giovanni Aiello is an Italian sommelier and hospitality manager with over 16 years of iinternational experience in Michelin-starred restaurants and luxury hospitality across Australia, Singapore, Japan, Denmark, Switzerland, Thailand, and the USA.

Originally from Sicily, Giovanni comes from a family of vine growers and spent both his childhood and early adult years closely connected to the vineyards, gaining a firsthand appreciation of grape growing and the origins of wine.

This early connection developed into a professional career in some of the world's leading restaurants and hospitality establishments, including Gucci Osteria da Massimo Bottura in Tokyo, Michelin-starred restaurants in Europe, and Amanpuri in Thailand.

His background has also shaped a particular passion for artisanal and independent winemakers, with an appreciation for the people, traditions, and sense of place behind their wines.

He completed the WSET Level 4 Diploma in Wines in 2024, achieving a Distinction in the D6 research assignment, which focused on sustainability in the wine industry.

Now in his journey as a wine educator, Giovanni hopes to share the practical knowledge and perspective he has gained throughout his career. His approach is to make wine approachable and engaging, helping students understand the connections between vineyard, winemaking, wine styles, food and culture, while developing the confidence to taste and communicate about wine.
